Our Café’s In-House Artisanal Bakery
In Ithaca’s Collegetown, near Cornell University
Throughout the week, we bake a variety of sweet treats to enjoy with your coffee or brunch: strawberry-apricot stuffed scones, chocolate mudslide cookies, real fruit muffins, and many other goodies you won’t want to miss.
All our sandwiches are also served on our own in-house authentic artisan bread, baked fresh in our stone-deck oven. All of our breads and specialty items are entirely handcrafted, using the finest ingredients available: King Arthur Flour, who has been milling fine flour for over 200 years, Plugra butter, kosher salt, fresh local eggs, Scharffen Berger chocolate, Valrhona cocoa, and organic evaporated cane juice, to name just a few.
Using such high-quality ingredients makes our job as bakers much easier — they are the key to excellence. Another secret to our great bread is the long fermentation time and the meticulous, deliberate handling of the dough by the bakers. Each loaf is crafted by hand, following the techniques built on by generations of bakers throughout history, and requires five hours to complete, from start to finish. Some of our European customers have even commented that our bread brings back memories of home.
